Easy & Delicious Ham & Bean Soup

Ingredients
- 2 tablespoons olive oil
- 1 yellow onion, diced
- 1 large carrot, peeled and diced
- 1 celery stalk, finely chopped
- 4 cloves garlic, minced
- 2 cups shredded or cubed cooked ham
- 6 cups chicken broth
- 2 bay leaves or 1 tablespoon fresh chopped thyme
- 3 tablespoons fresh chopped parsley
- 4 (15-ounce) cans of white beans (cannellini), drained and rinsed
- ½ teaspoon white pepper
- Pinch of salt (if needed)

Heat the olive oil in a large pot over medium-high heat. Add the onion, carrot, and celery, cooking until the onion softens (about 5 minutes). Stir in the garlic and sauté for another 30 seconds to a minute, just until fragrant.

Add the shredded (or cubed) ham and let it cook for another 2 minutes before pouring in the broth. Toss in the bay leaves (or thyme) and parsley. Bring everything to a boil, then reduce the heat and let it simmer for about 5 minutes to let the flavors meld.

Stir in the beans and season with black pepper. Let it simmer for another couple of minutes, then give it a taste and add salt if needed.
